I was talking to my aunt last week and was telling her how lazy I was feeling to cook. She then suggested making this super quick recipe based out of tomato and rice. If you are a bachelor, you will love this recipe for you would want to finish cooking in one go. I do not have step by step pictures. But, I have tried to keep the recipe simple and crisp.
Ingredients: Serves 2
[Listed in the order it is going to be used in the cook]
Ghee/oil- 1 tbsp
Mustard- 1 tsp
Jeera- 1 tsp
Clove- 1
Cinamon- 1/2 inch
Pepper- 1/2
Onion- 1
Masala:
Tomatoes-2
Ginger- 1/2 inch
Garlic- 2
Coconut(optional) - 1 spoon
Rice- 1 cup
Water- 2.5 cups
Salt- to taste
Jaggery(optional)- 1 tsp
Coriander- for decoration
Grind raw tomatoes, ginger, garlic with a spoon of grated coconut.
In a cooker, take ghee/oil, add mustard seeds, jeera.
Once it splutters, add our spices clove, cinnamon and pepper.
Also add onion and fry till golden.
Then add the ground mix and fry till the raw taste goes away.
Add washed rice to the mix and fry for a minute.
Add water and salt.
Little jaggery for balancing the taste.
Pressure cook for a whistle.
Garnish it with coriander.
Tomato bath is ready to be served! :-)
